There is some difference of opinion regarding the propriety of residual sugar in Alsatian wines. Traditionally, any wine not made from late-harvest grapes would be fermented to dryness. Bucking convention, the family-owned estate of Rolly Gassmann produces wines in a distinctly off-dry style. The Riesling is sumptuously textured but not at all heavy. In fact, it has something of the ethereal quality common to the best Rieslings from any terroir. We think it would enhance either Easter or Passover meals.
